Starters:
Perfect egg with mushroom velouté, bacon crisps and shavings of Comté cheese.
Candied vegetables and fresh goat’s cheese on an Espelette chilli shortbread, served tatin-style.

Main courses:
Rosette of chicken fillets, ivory sauce, potato and leek galette.
Pollock steak, mussel cream with fresh herbs, risotto fingers.

Desserts:
Thin apple tart with salted butter caramel and Normandy vanilla cream.
A gourmet selection of chocolate treats.

Trout gravlax, tangy vinaigrette, piccalilli, vegetable pickles and microgreens.

Main courses:
The most tender beef with its truffle oil-infused gravy, a fricassee of baby new potatoes and mixed wild mushrooms, with caramelised shallots.
Cod fillet, Béarnaise emulsion,
roasted carrots, new potatoes, fennel and red onions.

Desserts:
French toast, Tarte Tatin-style apples and vanilla ice cream.
Chocolate Breton shortbread with ganache,
caramelised peanuts and chocolate crunch
